From the kitchen of Stephanie Knewasser. The crumb
topping is what makes these special.
Mix:
3 bananas, mashed
3/4 c sugar
1 egg
1/3 c oil
Add:
1 1/2 c flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Stir until combined.
Spoon into greased or lined muffin tins.
Crumb Topping:
1/3 c packed brown sugar
2 Tbsp flour
1/8 tsp cinnamon
1 Tbsp butter
Mix until coarse crumbs.
Sprinkle on top of batter.
Bake @ 375
18 minutes for 12 muffins
13 minutes for 18 muffins
