From the kitchen of Josephine Barkwell. This was a
Pillsbury prize winner in the 1950's. It's good warm or
cold.
Grind together:
1 large orange, pulp and all
1 c raisins
1/3 c walnuts
Sift together:
2 c flour
1 tsp baking soda
1 tsp salt
1 c sugar
Add to the dry ingredients:
1/2 c shortening
3/4 c milk
Beat for 2 minutes.
Fold the orange, raisin & nut mixture into the batter.
Pour into a 12x8x2 or 13x9x2 pan.
Bake @ 350 for 50 minutes.
For cupcakes, bake approx 25 minutes.
Nut Topping:
Drip:
1/3 c orange juice
over the warm cake.
Combine:
1 tsp cinnamon
1/4 c chopped walnuts
Sprinkle over cake.
