From the kitchen of Stephanie Knewasser. I like these
with rum, but for a basic raisin cookie use vanilla instead.
*In a pan:
2 c raisins
1 ½ c water
Bring to a boil.
Simmer until most of water is absorbed.
In mixer:
1 c crisco
1 ½ c sugar
Add one at a time:
4 eggs
1 tsp rum extract
Add:
1 tsp baking soda
3 3/4 c flour
Mix just until combined
Stir in drained raisins.
Don't over mix.
Drop by spoonfuls onto GREASED cookie sheets.
Bake 10 minutes.
*If not cooking raisins, use 3 ½ c flour.
