From the kitchen of Stephanie Knewasser. Chopped
cranberries are tossed with sugar, folded into the
batter and sprinkled with cinnamon sugar.
Mix:
1 c cranberries, coarsely chopped
2 Tbsp sugar
Set aside.
In a mixing bowl:
1 3/4 c flour
3/4 c sugar
2 tsp baking powder
1/4 tsp salt
1 egg
3/4 c milk
1/3 c oil
Combine.
Fold in sugared cranberries.
Sprinkle with cinnamon sugar.
Makes 12 muffins.
