From the kitchen of Stephanie Knewasser. This recipe is
from Aethenos Feta. I've adapted it. Add more of what you
like to suit your tastes. Simple healthy dish.
Cook 1 c cut pasta, according to directions.
Meanwhile, cook 1 box frozen spinach, according to
directions.
While pasta & spinach are cooking, prep the veggies.
3 plum tomatoes, chopped
3 green onions, chopped
Combine everything.
Drizzle with 1/2- 1 Tbsp olive oil.
Toss.
Crumble 1-2 oz feta over top.
Sprinkle with salt & pepper.
The salt & pepper make a big impact in this dish,
don't skip.
