From the kitchen of Diomira Putano.  A simple soup of
northern beans, potatoes, spinach, tomatoes & rice.
The NIGHT BEFORE soak:
1/2 lb great northern beans

The next day:
Boil beans for 15 minutes.
Throw out water.
Boil again with:
2 quarts water
for 15 minutes & keep water.

In a pan:
6 Tbsp oil
garlic
Brown garlic.  Take garlic out.

Add:
the beans
1 3/4 c potatoes, cubed
3/4 c celery, sliced
1 lb spinach- just rinse & put in
14 1/2 oz can strained tomatoes
2 qt additional water
Cook slowly for 1 hour 20 minutes.
After it cools off,
Add:
1 1/2 c COOKED rice
