From the kitchen of Judi Jones. This soft white cookie is studded with
mini chocolate chips. Overmixing will result in a tough cookie, so mix
just until combined.
Cream:
1 c shortening
2 c sugar
Add:
1 c eggs (5 large)
1 tsp vanilla
In a seperate bowl combine:
5 tsp baking powder
5 1/4 c flour (start with 5c)
Add flour mixture to cream mixture alternately with
1 c milk
1 tsp vanilla
Add:
12 oz mini chocolate chips
Drop by tsp onto greased cookie sheet.
Bake @ 350, 15 minutes
Tops will remain pale. Check bottom to see if set.
Makes 4 1/2 to 5 dozen.
I added a LOT of extra flour, then chilled to
make the dough firm enough to roll. Tasty
with Shiny Cookie Icing, Confectioner
Icing, or Royal Icing.
