From the kitchen of Stephanie Knewasser.  Basic
recipe.
In a large pot:
 
 3 lb chicken, cut up
  1/3 c chopped onion
  1/2 tsp poultry seasoning
  1/4 tsp salt
  1/4 tsp pepper
  3 c water
Bring to a boil.  Cover & simmer 25 minutes.
Add:
  
2 c sliced carrots
  1 c chopped celery
Simmer, covered, for 10 minutes.

Dumplings
In a bowl, mix:
 
 1 1/3 c flour
  2 Tbsp parsley
  2 tsp baking powder
  1/2 c milk
  4 Tbsp oil

Drop dumplings onto MEAT, not liquid.
Cover & simmer 12 min or until toothpick comes out
clean.  Transfer dumplings, meat & veggies to serving
dish, cover.  If anything is left in pan, discard.

Gravy:
Mix:
 
 1/2 c cold water
  1/4 c flour
Add:
  
2 c chicken broth
Cook & stir until bubbly.  Cook & stir one min more.
Season with salt & pepper, pour over top of dish.
