From the kitchen of Ann Marie Barkwell. Mom's famous
meatballs. Originally, they were cooked in oil on the
stovetop. Years ago, she started baking them in the oven
to reduce fat. Either way, they're great.
See her recipes for Marinara (no meat) and Sauce (meat
base).
1 lb ground pork
1 lb ground beef
2 c bread crumbs
1/2 c romano picorino cheese
1 tsp pepper
2 tsp salt
2 tsp parsley
2 pinches of basil
4 eggs
2 cloves garlic, crushed
chunk of green pepper, for flavor when baking
Using hands, combine all ingredients.
Roll into balls.
Coat a pyrex dish with olive oil.
Place meatballs.
Add water to avoid sticking.
Put chunk of green pepper in.
Bake @ 350, 1 hour, covered.
Slice center meatball to see if cooked through.
These meatballs are sliced in half to show the
center.
