From the kitchen of Renee Wilson.  This amazing stuffing is what Renee
prepares every year at Thanksgiving.  The oat apple bread makes it special.   
She's also shared her
Turkey & Gravy recipes.
In a medium skillet, over med-low heat, melt:
 2 Tbsp unsalted butter
Add:
 1/2 c leeks, finely chopped (white & tender green parts)
 1 medium carrot, finely chopped
 1 medium celery rib, finely chopped
Cover & cook stirring occasionally until tender, about 10 minutes.
Season with:
 1/4 tsp salt
 1/4 tsp pepper
Transfer to a large bowl.
Add:
 10 Tbsp unsalted butter, melted
 6 c Wegman's Oat Apple bread (about 11 oz)
 1 1/2 c turkey stock/ broth
 1/2 c raisins
 1/2 c toasted & coarsely chopped walnuts
 1 1/2 tsp poultry seasoning
Mix well.
