From the kitchen of Katinka Burcin. Everyone asks
for this recipe when they taste the cake and best of all
it has never failed. It's so easy.
1 c butter
1 1/2 tsp baking soda
2 c sugar
1/2 tsp salt
3 eggs
1 tsp cinnamon
3 c flour
1/8 tsp nutmeg
2 tsp vanilla
1 c chopped walnuts
3 to 4 c peeled chopped apples, any size pieces
Cream the butter & sugar.
Add the vanilla & eggs.
Combine & add the dry ingredients.
Gently add the apples & nuts.
Pour into a greased & floured tube pan.
Cook at 350 for 1 hour 15 minutes.
Cool for 15 minutes & turn it over onto a plate.
I like to sprinkle a little powdered sugar on top
but it's much better with a small amount of
cream cheese frosting.

This is fabulous. I've made it with 1/2 c butterscotch chips in place of the
nuts. We like microwaving slices of this so it tastes fresh from the oven.
