From the kitchen of Stephanie Knewasser.  I used to call these
Orange Cookies because kids wouldn't try carrot cookies.  If you
don't tell, no one will ever figure out there are carrots in them.
They're moist & addictive. This was my mother's recipe, who got
it from Aunt Kay, who got it from her mother.  A few years ago I
saw Aunt Kay's recipe & this is very different.  I have a tendency
to change recipes.
Cream:
1/2 c crisco
1/2 c butter
3/4 c sugar

Add:
1 egg
1 tsp vanilla
1/2 tsp lemon extract

Add:
2  3/4 c flour
2 tsp baking powder
1/2 tsp salt
1 c cooked carrots, mashed

Drop spoonfuls onto GREASED cookie sheet.
Bake @ 400, 12-15 minutes.
Cool completely.

Frosting:
Combine confectioner sugar with rind of one orange.
Add
orange juice until spreading consistency.

Don't skip the frosting!  It's a different cookie without it!
