From the kitchen of Stephanie Knewasser. I've tried a few p.b.
cookie recipes over the years. This is my favorite. It's from
Crisco. Variations:
- Add m&m's
- Top with a mini Reese Cup (after removed from oven)
- Top with a Hershey Kiss (after removed from oven)
- Roll cookie dough ball in sugar before pressing
- Top w/ pb. frosting, recipe at right below photo
Cream: 1/2 c Crisco
3/4 c creamy peanut butter
1 1/4 c brown sugar, packed
3 Tbsp milk
1 Tbsp vanilla
Mix well.
Add: 1 egg
Beat just until blended.
Add: 1 3/4 c flour
3/4 tsp salt
3/4 tsp b. soda
Mix just until blended.
Roll into balls, flatten with fork.
Bake @ 375, 8-9 minutes
Bake until set & just beginning to brown.
Cool 2 min before moving to cooling rack
These were made as bars then frosted with PB Frosting. PB Frosting: 1/2 c butter, softened 1/2 c creamy pb 2 c confectioner sugar 2 tsp milk Beat until smooth

These were baked then topped with p.b.
cups when they came out of the oven.
