From the kitchen of Stephanie Knewasser.  This can
be put together in a snap.  As a shortcut, I add 1/4 c
flour to spices.  Reduce flour for more kick.
In bowl combine:

1 Tbsp salt- use a little less
1 Tbsp sugar
1 tsp cornstarch
1 tsp paprika
1/2 tsp garlic salt
1/2 tsp black pepper

Rinse 1 lb chicken.  Cut into chunks.
Coat chicken with spices- lightly, this is strong.
Then coat chicken in FLOUR.

Coat a pan with oil.  Cook chicken over
med heat, covered, turning occasionally,
until cooked through.
Add additional oil if necessary to avoid sticking.
Spicy Fried Chicken- used as a marinade
* Variation:  Combine the spices (NO flour), 1 Tbsp oil & 3 Tbsp
milk.  Coat chicken.  Grill.  No marinading time needed.  Good
on a bun.
* Another variation: used 2 Tbsp oil & 2 Tbsp vinegar with
spices, minus flour, grilled, no marinate time.  Great with
watermelon.
