From the kitchen of Diomira Putano

As a teenager, Aunt Diomira moved from Italy to America. This is not the typical American pizza. It's topped with grated Romano instead of mozzarella. Use Aunt Diomira's Pizza Sauce.



In a bowl:

4 Tbsp sugar

5 Tbsp oil

1 tsp salt

Mix.

Add:

1 egg

Set aside.

Dissolve:

2 packages yeast in 1 c milk or water, warmed

Add to egg bowl & mix.

Add:

3 1/2 c flour

Mix good.

If dough is sticky, touch your hand in flour & keep mixing until it is smooth.

Leave in bowl & let rise until doubled.

Rub 5 Tbsp oil all over a cookie sheet.

Spread the dough.

Let it rise again.


Bake @ 375 for 8 minutes.

If it isn't a nice golden color, put it back in oven for 2-3 minutes.


Spread pizza sauce over crust.

Sprinkle with grated Romano cheese.

Put back in oven just to let the sauce get a little firm, just so it won't be runny, about 10-15 minutes. Don't let the sauce get dry.

I think 5 Tbsp oil on the cookie sheet is a typo because the oil sloshed out of the pan when I spread the dough, so I generously
coat the pan without measuring. This dough makes a thick crust. The longer it raises, the thicker it will be. It will continue to raise as it bakes. The edges are golden & crisp from all of that oil. The center is amazingly soft.
